Why "Toes in the Water"?

Life gives us many "Toes in the Water" moments, it is simply up to us to recognize and appreciate them. These moments can only be explained by being truly content with your surroundings and it is the type of moment where you look around and realize this is what life is worth living for. Joe and I live to celebrate these moments with each other and those we love and we plan on filling up our lifetime with many, many Toes in the Water.

DELICIOUS PEANUT BUTTER ENERGY BARS

I recently discovered this recipe via Kelli Curtiss (Thanks Kelli!) and Joe and I are hooked. We have been making them every week and usually have one for breakfast every morning.

I love that they are a) EASY PEASY b) versatile-you can add whatever fruit and nuts suit you c) delicious without being bad for you. They pack a punch of energy and seriously, who doesn't love peanut butter.

I highly recommend them, in fact, I'm off to buy more ingredients so we can make more today!!



Here is the assembled ingredients-like I said, SIMPLE.



Next, melt your peanut butter, oil/butter mixture or coconut oil and agave nectar over medium low heat. Really you just want to meld all of this together and make it pliable enough to mix your dry ingredients in.





Mix in all your dry ingredients until they are thoroughly coated with the butter mixture. Press into a 9 1/2 X 13 inch pan. You can line the pan with parchment for a little bit easier time but either way is fine. Cool in the fridge and Kelli and I both recommend storing in the fridge so they stay together better.
